5 Alarm Corned Beef Hash
  • 1 12 oz. can of Brazilian corned beef
  • 1 large potato
  • ½ medium yellow onion
  • 2 celery stalks
  • 1 TBSP peanut oil
  • ½ medium red bell pepper
  • cayenne, tabasco, habanero to taste
  • 1 TBSP minced garlic
1. Dice potato & boil til tender
2. Saute onion, bell pepper & garlic
3. Add the Brazilian corned beef, spices & stir.
4. Add the potatoes & celery, stir & heat thru.

Spinach & Shell Salad
  • 6oz frozen chopped spinach
  • ½ lb of shell pasta
  • ½ red bell pepper
  • ½ green bell pepper
  • ½ small yellow onion
  • ½ tsp red pepper flakes
  • 1 tsp lemon juice
  • 6 oz Italian dressing
  • Tabasco to taste
Prepare pasta
Mix the mess in a bowl & refrigerate

Bacon & Chive Potato Salad
  • 6 cups quartered unpeeled small red potatoes
  • ¾ cups of mayonaisse
  • 2 TBSP stone ground mustard
  • 6 slices of bacon, drained & crumbled
  • ¼ cup chives or green onion
1. Add potatoes to boiling water & cook til tender
2. Mix mayonnaise & mustard in a large bowl
3. Add the rest of the ingredients, mix & refrigerate

Cole Slaw
  • 2 cups cabbage
  • 3 tsp carrot
  • ½ tbsp minced onions
  • 3 tsp granulated sugar
  • ⅛ tsp salt
  • 1/32 tsp pepper
  • 3 tsp cup milk
  • 2 tbsp mayonnaise
  • ⅓ tablespoon white vinegar
Shred the cabbage, scrape the carrots, stick eerything in a bowl, mix it up & refrigerate.

Perfect Chili
  • 1 onion
  • 1 green bell pepper
  • 2 tablespoons of minced garlic
  • ½ lb hamburger
  • Worcestershire sauce
  • A1 sauce
  • salt & black pepper
  • 1 can Brooks Chili Hot beans
  • 1 can stewed or diced tomatoes
  • jalapeno pepper
  • cayenne pepper
  • Tabasco peppers
  • dried red pepper, powdered or liquid versions of aforementioned peppers

 1.Dice the onion & green bell pepper
 2.Dice the fresh hot peppers
 3.Spray a pot with PAM
 4.Dump in the bell pepper, onion & garlic & sautee a bit.
 5.Dump in the hamburger, stir & break up & brown.
 6.Add some salt & black pepper to this
 7.Glob in some Worcestershire sauce & some A1
 8.stir & cook
 9.Toss in the beans & tomatoes
10.Stir
11.Add hot peppers, fresh, dried or sauce
12.Heat boil & reduce heat & let simmer
13.Serve with saltines or Fritos

11b.For a mildere chili, just use one jalapeƱo undiced & then pull it out before serving

Jerk Rub
  • 2 tablespoons cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley
  • 2 teaspoons dried crushed red pepper
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

This will fill a standard spice bottle.

Herbed Scalloped Oysters
  • 1 C fresh bread crumbs
  • 1 C fresh cracker crumbs
  • 1 stick unsalted butter, melted
  • ¾ C fresh parsley (minced)
  • ¼ C snipped fresh dill
  • 48 oysters - reserve 3 TBSP lliquid
  • 1½ TBSP heavy cream
  • Tabasco to taste
  • Lemon wedges?

1.In a bowl stir together the bread crumbs, the cracker crumbs, the butter, the parsley, and the dill.
2.Spread half the mixture in the bottom of a 13 x 9 inch backing pan.
3.Arrange oysters in one layer.
4.In a small bowl stir together the oyster liquid, the cream, the Tabasco, and salt and pepper to taste.
5.Drizzle over oysters.
6.Cover oysters with remaining crumb mix.
7.Bake in preheated 425 F oven for 20-25 minutes or until crumbs are golden.

Ghoulash
  • 1 Package of chopped stew beef
  • olive oil
  • 1 yellow onion
  • 1 green pepper
  • 1 can of tomato sauce
  • 2 TBSP minced garlic
  • paprika, salt & pepper to taste
  • Italian seasoning to taste
  • 1 TBSP Maggi würze
  • egg noodles (Bechtle's Traditional)
1. Spray a pan with Pam
2. Add garlic, bell pepper, and onion.
3. Add stew meat - add some salt & pepper.
4. Add tomato sauce.
5. Add Maggi & seasonings to taste.
6. Bring meat & tomato sauce to a boil, reduce heat, cover & let simmer for an hour or til meat is tender.
7. Prepare pasta with the olive oil
8. Serve sauce over pasta.

Veggie Burger
Toast the muffin & nuke the frozen veggie patty.
I give it 40 seconds @ .8 power on both sides, then add the cheese slice & nuke it another 10 seconds @ .8 power.
Make the sandwich & toss some taco sauce onto the patty.

Shit
  • ½ lb spaghetti
  • 1 16 oz can Brooks Chili Hot beans
  • ½ package Bob Evans zesty hot sausage
  • 1 medium yellow onion
  • 1 TBSP minced garlic
  • ½ medium red bell pepper
  • ½ package of Cincinnati chili seasoning
  • 6 mushrooms
  • ½ cup finely shredded Colby & Monterey Jack cheese
  • Cayenne & tabasco to taste
1. Saute half the onion, the bell pepper & garlic.
2. Add the sausage & cool.
3. Add the beans & spices.
4. Prepare the spaghett.
5. Add the mushrooms.
6. Serve the meat mix on top of the spaghetti, sprinkle remaining onions oto the mix & top off with cheese.

Monte Cristo Sandwich
  • 2 slices bread
  • 1 teaspoon mayonnaise
  • 1 teaspoon dijon mustard
  • 2 slices cooked ham
  • 2 slices cooked turkey
  • 1 slice Swiss cheese
  • 1 egg
  • 1/2 cup milk
1. Spread bread with mayonnaise and mustard. Pile ham, Swiss and turkey slices on bread.
2. Mix egg and milk together.
3. Dip & coat both sides of the sandwich in the mixture.
4. Melt butter in pan & brown the sandwich on both sides.
